Yellow is a slightly oxidized, lightly fermented (yellowed) tea with yellowish leaves which makes a sunny brew. Yellow tea is comparatively rare. It is one of China’s oldest tea varietals and is produced in Sichuan, Hunan, Anhui and Zhejiang provinces.
Yellow tea is typically made of single buds or a bud and one leaf. These float straight up in the steeping water.
The most popular varietals are JunShan Silver Needle and Liu An among others.
